Instant Pot Creamy Chicken Soup, Quick and Easy

This Creamy Chicken Soup is so comforting especially in the winter months, It is divine with croutons, it makes an amazing soup topper they are an absolutely irresistible combination.

Ingredients


½ small onion, diced

1 garlic clove, minced

1 small celery rib, diced

¼ tsp pepper

2 ½ cups chicken broth

2 tbsp. all-purpose flour

1 cup of water

2 oz. reduced fat cream cheese, cubed

½ cup Swiss cheese, shredded

¼ cup cheddar cheese, shredded

1 cup cooked shredded chicken


Ingredients to Marinate Chicken


½ tsp salt

¼ tsp pepper powder

1 tsp ginger garlic paste

¼ tsp turmeric.


Directions


1. Select sauté and then add onion, garlic cloves, celery, pepper, and pour in broth. Close and lock the lid of the instant Pot.

2. Select Pressure cook or manual and then adjust the ‘+’ or ‘– ‘button to set 5 minutes of pressure cooking time. Once the pressure has released, open the lid.

3. Now select sauté on high. Then Mix all-purpose flour and water until smooth, pour the mixture into cooker. Cook for 6 minutes until thickened.

4. Whisk in cream cheese, Swiss cheese, and cheddar cheese until melted. At the end add chicken and cook for another 1 minutes.

5. Grill Chicken: Marinate Chicken with ½ tsp salt, ¼ tsp pepper powder, 1 tsp ginger garlic paste and ¼ tsp turmeric. Wrap the chicken with foil paper and grill in the oven at 400 degrees for 15 minutes.

6. Serve them hot with croutons.
