This Egg Gravy is intensely flavorful and very delicious on every single bite. Making your own egg chili masala takes this recipe to the next level.
Ingredients & Steps to make Egg chili masala powder:
1 tbsp. cumin seeds 1 tbsp. coriander seeds 1 tsp. fennel seeds 3 whole red chilies 1tsp. black pepper powder 1 bay leaf 1 small piece of cinnamon stick 3 cloves 2 green cardamom 1 small piece of star anise 10 whole cashews
1) In the pan toast whole garam masala to release flavors then grind them into powder.
Ingredients & Steps to make Egg Gravy:
2 tbsp of oil
6 eggs 2 large tomatoes, finely chopped 1 large onion, finely chopped 1 tbsp. grated ginger 1 tbsp. crushed garlic Pinch of turmeric 2 tbsp Dried fenugreek leaves
1 tbsp egg chili masala powder
Salt to taste
Garnish with finely chopped coriander leaf
1) To Boil Eggs: Heat up a pot of water and bring it to boil. Then immediately place the eggs in the boiling water and set the timer for 10 minutes. After 10 minutes’ drain and cover them with cold water and peel the eggshell. Slice the eggs into half lengthwise and set it aside 2) Stir Fry Boiled Eggs: Heat pan on medium heat with 1 tbsp tablespoon of butter or ghee then stir-fry the sliced eggs with few sprinkles of egg chili masala powder, salt for 3-5 minutes. 3) Finally: Finally, in a large pan on medium high heat add 2 tbsp of oil and fry 1 large finely chopped onion, 1 tbsp. grated ginger, and 1 tbsp crushed garlic until golden. then add a pinch of turmeric powder, 1 tbsp of egg chili masala powder and some water and cook for 2 minutes. Then add 2 large chopped tomatoes and salt to taste and cook until they are soft. Add 2tbsp of dried fenugreek leaves and mix them all up.
As soon as you see the oil oozing out place the fried eggs on top of the tasty gravy and gently press down them down and that’s it, serve them hot with your favorite flat bread or rice.
Serve them hot to your loved ones and enjoy.
Note
Storage: The Egg Chili Masala can be stored in an air-tight container in the fridge for up to 3 days.
