1 cup (240 mL) milk

2 large eggs

1 Tsp. (8 mL) pure vanilla extract

1 Tbsp. mayonnaise (makes the cake moist)

Ingredients for Nutella Cream

750 g of Nutella

½ a pint of heavy whipping cream

Directions

  1. Preheat the oven to 350°F (180°C).

  2. Grease two 9-inch round cake pans with oil and line the bottom with a cut-out round piece of parchment paper.

  3. To a medium bowl, add all the dry ingredients i.e. 1tsp salt, 2 cups all-purpose flour, 2 tsp baking soda, 1 tsp baking powder, ¾ cup unsweetened cocoa powder, 2 cups sugar. Mix together

  4. Add all the wet ingredients, i.e. add 1 cup of vegetable oil, 1 cup of milk, 2 large eggs, 1 tbsp of mayonnaise, and 1 tsp vanilla to the dry ingredients and mix until everything is just combined for 2 minutes, then add 1 cup of boiling hot water and mix for 1 minute but make sure not to overmix.

  5. Pour the batter into the 9-inch springform pan and then gently tap the pan on the counter a couple of times to level out the batter and to remove any air bubbles. Bake in the preheated oven for 45 minutes - 1hour, or until a thin wooden skewer comes out clean.

  6. Meanwhile, make the Nutella sauce, To a saucepan add one full jar of i.e. 750 g of Nutella and add ½ a pint of heavy whipping cream a little at a time and keep mixing in low heat so that it doesn’t burn and if it’s not that smooth add more heavy whipping cream and mix until smooth and creamy. It might take about 5 to 8 minutes. make sure to let it cool off a little bit before adding.

  7. Once your cakes are done baking, let them cool off for 10 minutes in the cake pan before transferring to a cooling rack to let them cool off completely.

  8. If you like, you can level your cakes with a knife to create a flat surface for stacking the cakes on top of each other.

  9. Pour the Nutella cream on top of the cake.

  10. Decorate the chocolate cake as shown in the picture or with berries of your choice and enjoy!

Notes

  1. Does not include cooling time.

  2. You can also use chocolate icing instead of Nutella cream

  3. Storage: Best if enjoyed immediately. The cake can be stored in the fridge for up to 3 days. But among friends and family, this cake won't last very long!

  4. Leftover Nutella cream: It can be stored in an air-tight container in the fridge for up to 3 days, or in the freezer for up to 1 month.

  5. Variations: top the cake with any fruits of your choice, or add some nuts
