Happiness is that these are homemade cookies and it’s so much better than store bought cookies. Since my daughter started going back to school, I have been trying to bake some snacks every week for my daughter's snack lunch box and peanut butter cookies are one of them. When I tried this recipe it turned out so good I had to definitely share it with you guys. I absolutely love capturing them 📸 and of course eating them!
It's a very simple recipe with no added preservatives. These cookies are soft and, chewy just the way I like them. If you prefer a crunchier cookie, leave your pan in the oven for a few extra minutes.

Servers 20 cookies
Ingredients
1 cup all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
8 tablespoons (1 stick) unsalted butter at room temperature
½ cup of creamy peanut butter
1 cup packed dark brown sugar
1 large egg
½ teaspoon pure vanilla extract
Directions:
Preheat the oven to 350 degrees F.
In a small bowl add flour, salt, and baking soda and mix them
Beat the butter and peanut butter in a large bowl with a handheld electric mixer on high speed, until smooth, for about 2 minutes.
Add brown sugar and continue to beat until the mixture is light and fluffy, about 2 minutes more. Add the egg and vanilla and beat to combine.
Add all the flour mixture and mix on low speed untill the dough just comes together. If it is very soft, refrigerate it to firm up, for about 1 hour.
Scoop the dough and make small 1 inch balls and place them on to the baking pan lined with parchment paper, spacing them evenly apart, as they will spread.
Bake the cookies for exactly 12 minutes until they are browned at the edges. They are still quite soft, let the cookies cool slightly on the pan.
Enjoy them warm, these cookies will keep in an airtight container at room temperature for 1 week.

Store the cookies: These cookies will keep in an airtight container at room temperature for about a week. Alternatively, you can freeze them in the zip lock bag for few months.
Bake the cookies in the center position
These cookies are soft, and chewy, if you like a crunchier cookie leave your pan in the oven for few extra minutes.
