Creamy Coconut Chia Pudding, Easy + Healthy Overnight Chia Pudding Recipe

If you are someone who is busy and no time to make breakfast in the morning and in need of a quick, no-cook, make-ahead breakfast, chia pudding is the best choice. Overnight chia pudding recipes are low in calories, high in protein . It just takes few minutes to prepare the night before and ready for breakfast the next morning. Creamy coconut chia seed pudding is thick, its creamy and very easy to make. These recipes are loaded up on fiber, and It help to keep you fuller for longer. They are awesome for breakfast but you can also enjoy as a snack


Serves: 4 Total time: 12 hours Prep time: 5 minutes


Ingredients

1 ½ cup coconut milk

½ cup plain yogurt

2 tablespoon of honey

1 teaspoon vanilla extract

1/4 cup chia seeds

Pinch of salt


Topping

Blueberries or any berries of your choice

Almonds slices

Chia seeds


Direction

  1. Add coconut milk, yogurt, honey, vanilla, chia seeds, and salt to the blending jar and secure the lid.

  2. Blend for 45 seconds and transfer to a bowl and refrigerate, covered, overnight.

  3. To serve, divide pudding into 4 glasses and top with blueberries, almonds slices and sprinkle some chia seeds

Note

  1. You can refrigerate and store them in the airtight container up to 3 days

  2. About Chia seeds: Its flavor profile is flavorless, its rich in Calcium, Protein. They are used as a recipe thickener.

  3. If you like it more sweet feel free to adjust the sweetness accordingly, minimum of 1 tablespoon of maple syrup Is more than enough but my family like this recipe sweeter so I sometimes add 3 tablespoon of maple syrup instead of 2.
