How to make buttery coconut dessert

These buttery coconut desserts are dense and delicious! It is a quick and easy dessert to make for kids on-the-go! You can serve them on any occasion like Ramadan, Christmas, Diwali, any family or friends gatherings or just as a snack for your kids. I recently made them on my first daughter Shanum’s birthday and It turned out looking and tasting heavenly, they taste scrumptious and a joy to eat!


Ingredients for crust

2 ½ cups almond flour

¾ cup brown sugar

½ teaspoon salt

¾ cup butter, melted

Ingredients For Filling

3 large eggs

1 can (14 ounces) sweetened condensed milk

1/2 cup all-purpose flour

1/4 cup brown sugar

1/4 cup butter, melted

1 tbsp vanilla extract

1/2 teaspoon salt

2 cups unsweetened shredded coconut

Garnish

¼ cup unsweetened desiccated coconut

½ cup of melted chocolate (optional)


Directions

  1. In a large bowl, mix almond flour, brown sugar, salt, and ¾ cup melted butter, mix it all to combine. Then transfer this mixture to baking dish and press it down firmly with your hands or any flat spoon then bake it in the oven at 350 Fahrenheit or 180 Celsius for about 12-15 minutes until its lightly golden and cool for 10 minutes.

  2. In a large bowl, whisk the first 7 filling ingredients until blended; stir in 2 cups coconut. Pour over crust. Bake it in the oven at 350 Fahrenheit or 180 Celsius until light golden brown, 25-30 minutes.

  3. Let it cool completely before you remove it from the dish.

  4. For presentation drizzle or spread melted chocolate and sprinkle unsweetened desiccated coconut and enjoy!



Note

  1. Use store-bought almond flour, or make it yourself by adding raw almonds to a food processor and blending until you achieve a flour-like consistency.

  2. Store in an airtight container on the counter for up to 3 days, in the fridge for up to 6 days, and in the freezer for up to 2 months.

  3. Wait for it to cool down completely before you cut into it, refrigerating overnight is better
