Ingredients for Squid masala paste:
12 Red chilies
1 tsp, Coriander
1 small piece, ginger
3 cloves, garlic
1 tsp, turmeric
1 tbsp. tamarind
1 tsp, salt
Ingredients for Squid Gravy:
8 medium sized Squid, 500g
3 tbsp. Oil
1 medium, onion
1 green chili, julienned
1 small piece, ginger
1 clove, garlic
2 medium, tomatoes
Few curry leaves
Finely chopped, coriander leaves
Optional Toppings
Fresh coriander, roughly chopped
Green chili, Slices
Directions
To a large pot on medium-high heat, sauté the oil, Oil, garlic, ginger, curry leaf, and onion until the onions are soft, about 5 minutes. Add tomatoes and fry 10 minutes (stirring in btw)
Add splashes of water as needed to deglaze the pan.
Add 3 tablespoon of squid masala paste and cook for 5 minutes, until fragrant.
Add squid cover and cook for 15 minutes (Stirring in btw) remove the lid to cook last ten minutes to thicken the gravy.
Garnish with finely chopped coriander leaves and enjoy
Give it a gentle stir, and serve with rice, a sprinkle of fresh cilantro, and some lemon wedges.
