How to make Oatmeal Chocolate Chips Cookies

I am excited to share with you Oatmeal Chocolate Chips Cookies. It's a great snack to eat after a meal, serve them at parties, or as a snack to meal prep for kids school lunch boxes.


SERVES 25 cookies


INGREDIENTS

1½ cups all-purpose flour

2 teaspoons baking soda

1 tablespoon ground cinnamon

1 teaspoon salt

2¼ cups old-fashioned rolled oats

9 tablespoons (1 stick plus 1 tablespoon) butter, at room temperature

1 cup packed brown sugar

¼ cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1 heaping cup chocolate chips


DIRECTIONS

  1. Preheat the oven to 325 degrees F

  2. In a medium-size bowl whisk together the flour, baking soda, cinnamon, salt, and oats.

  3. Beat the butter, brown sugar, and granulated sugar in a large bowl with a handheld electric mixer, on high speed, until light and fluffy, about 3 minutes. Add the vanilla, then beat in the eggs, until smooth.

  4. Add the flour mixture and stir gently to combine.

  5. Fold in the chocolate chips.

  6. Scoop the dough and make small 1 inch balls and place them on to the baking pan lined with parchment paper, spacing them evenly apart, as they will spread.

  7. Bake the cookies until they are golden brown, 12 to 15 minutes.

  8. Let the cookies cool slightly before enjoying them warm. The cookies will keep, in an airtight container at room temperature, for about 1 week.







NOTE

Make small balls and flatten the cookies, then they may be frozen until solid on the sheet pan, about 30 minutes. Transfer them to a heavy-duty zip-top bag for storage. Bake them right from frozen when you want some; they may take an extra few minutes
