Eggs are good for you, it’s a great food to include in family meals since they are a good form of protein and they contain fat, which is essential for brain development in little ones. Eggs are super versatile; you can serve them in many ways to find how your family likes them best. We love them in a simple scramble, poached, in curry, deviled Eggs, deep-fried, or simply boiled eggs.
Ingredients & Steps to Prep eggs:
4 eggs
2 tbsp. of finely chopped onion
2 tbsp. of finely chopped coriander leaves
2 green chilies, finely chopped
Salt
(i) Heat up a pot of water and bring it to boil. Then immediately place the eggs in the boiling water and set the timer for 10 minutes. After 10 minutes drain and cover them with cold water and peel the eggshell.
(ii) Slice the eggs into half lengthwise separate the egg yolk and pop it in the bowl and place the egg white on the plate.
(iii) Using fork break the egg yolk into a fine crumble (don’t mash them to paste) to this I will be adding finely chopped onion, coriander leaves, green chilis, and salt to taste.
(iv) Using the spoon evenly distribute yolk mixture into the egg whites.
Ingredients & Steps to make Batter:
1 cup garbanzo bean flour/ chick pea flour/ besan flour (Click here: Link to buy from Amazon)
1 cup Water (add more if required)
1/2 tsp. red chili powder
Salt to taste
(i) Mix flour, chili powder and salt together
(ii) Add water a little at a time, then whisk until batter is smooth.
(iii) Dip the stuffed egg into batter, allow excess to drip off.
(iv) Deep fry until golden brown.
(v) Finally serve them hot with ketchup or any chili sauce of your choice to your loved ones and enjoy.
