Easy, Quick and simple Salad. This Salad recipe with Avocado, Tomato, Cucumber and freshness of mint is very refreshing!
It is rather basic; this recipe doesn't necessarily abide by the rules for a "balanced meal" since it doesn't have any grain items. It is a salad, after all. And realistically, not every salad is going to have grains and/or legumes in them. With that said, if you want to make this into a proper "balanced" meal, think about adding a few grains in with the general mish-mash. Something like quinoa, or earthy colored rice - anything you want.
Yield: 2 servings
Prep Time: 5 minutes
Total Time: 5 minutes
Ingredients
1 English cucumber, chopped
1 large tomato, chopped
½ avocado, diced
¼ cup feta cheese, crumbled
Fresh mint to garnish (or cilantro)
Direction
Just toss everything in a large bowl to combine and Enjoy!
This salad is very refreshing and it works wonderfully as sides on any meal
Notes
You can add any other veggies of your choice, like corn or bell peppers. To make this a complete meal add some whole grains like brown rice or quinoa.
Add lemon juice, olive oil, cilantro or any dressing if desired.
You can also add it to a wrap with some lettuce, or olives, or just enjoy it as a salad.
Try adding some romaine lettuce to make this a leafier salad.
