Simply Granola Recipe, homemade plus delicious with no added sugar or oil!
Yield: 6 cups (12 servings)

INGREDIENTS
2 cups (312 g) old fashioned rolled oats
1 cup of puffed rice
½ cup (140 g) raw almonds, roughly chopped (or other nut of choice)
½ cup (140 g) raw cashew, roughly chopped (or other nut of choice)
1/2 cup (75 g) raw pumpkin seeds (or other nut/seed of choice)
1/2 cup (75 g) shredded unsweetened coconut flakes
1/2 teaspoon salt
1 cup (230 g) Dates
½ cup peanut butter
¼ cup water
1 tbsp vanilla extract
1/2 cup (75 g) goji berry or any other dried fruit, chop them if they are large
1/4 cup chia seeds
¼ cup hemp seeds
Recipe
1. Preheat the oven to 300F (150C)
2. In a large bowl, add all the dry ingredients oats, puffed rice (if you don’t have it you add a cup of oats instead), coarsely chopped almonds and cashew, unsweetened shredded coconut, pumpkin seeds, and salt then give it a mix
3. Blend Dates, peanut butter, 1 tbsp vanilla essence and water until paste
4. Combine the two mixtures together and mix, then pour onto the baking pan.
5. Cook for 30 minutes, stirring every 15 minutes to get even golden color
6. Let it cool, and then transfer to air-tight container.
7. Add any dried fruits of your choice, chia seeds, hemp seeds (optional)
8. Enjoy with smoothie bowl, milk, yogurt or on its own as a snack. (Watch video three ways I like to eat granola for breakfast)
Notes
1. Do not cook the dried fruit
2. You can add any nuts or seeds of your choice, or dried fruit such as goji berry, apple, apricot, mango etc. and spices such as cinnamon
3. Keep an eye on it and stir more frequently to avoid burning and stir every 15 minutes to get even golden color, when it's lightly golden granola its ready (when it's hot they are soft it will harden as it cools)
4. For Stewed Berries:
Stew a cup of frozen berries on stove or in a microwave until its completely cooked and soft
5. Soaked Chia Seeds:
Add 1 tbsp. of chia seeds that and soak then in the water for 30 minutes
