How to make mashed potatoes using an instant pot

Servings: 3 Prep Time: 10 min Cook Time: 10 min Total Time: 20 min


Ingredients:

2 lb. medium potatoes (peeled and cut into large pieces)

½ cup butter (1 stick) butter room temperature

¼ cup whole milk (warm)

Salt to taste

Direction

  1. Peel and cut the potatoes into few large pieces and place them in the instant pot, Fill the pot with cold water until it covers the potatoes.

  2. Place the lid on your instant pot. Set the valve to sealed and pressure cook for 10 minutes, when done quick release the steam by moving the pressure valve to venting.

  3. Drain and mash the potatoes, use a potato masher to mash the potatoes until smooth.

  4. When the potatoes are smooth, add butter, few piece at a time and continue mashing until well combined. Now add rest of the butter, this way it gives the potatoes the best texture and flavor.

  5. Pour in the warm milk little at a time and mash until combined.

  6. That’s it the creamy, fluffy and smooth mashed potatoes are ready to serve.

  7. At this point make sure to taste and add salt if needed.

  8. Serve topped with pepper and finely chopped mint. For the classic look place a piece of butter on the top.

  9. Enjoy!





Note:

1. Potatoes Use the right type of potatoes. This recipe needs starchy potatoes not waxy. Yukon Gold potatoes are commonly used.

2. Always put potatoes in cold water to start, then bring to a boil. That way the potatoes cook more evenly. This recipe is easily doubled.

3. Garnish: 1 tsp pepper and 1 tsp finely chopped mint (optional)
