Ingredients
To cook pasta
2 cups bow tie pasta
4 cups water
Salt
1 tsp oil
To cook Vegetables
1 tablespoon oil
5-6 mushrooms, sliced
1 medium capsicum, chopped
1/2 of medium zucchini, sliced
4 cloves garlic, minced
Salt to taste
To cook white sauce
2 tbsp. butter
1 tbsp. all-purpose flour
1.5 cup of milk
1/4 cup cream cheese
1 tsp dried oregano
1 tsp dried basil leaves
1 tsp crushed pepper
1 tsp red chili flakes
1/4 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese
2 cups of spinach, chopped
Garnish with mozzarella cheese on top
Directions:
1.Cook pasta as directed on package. I cooked the pasta for 15 minutes until tender but still a little firm to the bite then drain pasta.
2. Pre heat large skillet on medium heat and when it’s hot add oil then garlic and vegetables, cook for 6-7 minutes until they are crisp and tender. When done transfer them to a large pot.
3. In the same skillet heat 2 tbsp. of butter then add a 1 tbsp. of all purpose flour then add milk and cream cheese and mix them well until its creamy. Add more milk until its creamy. "I have used 1.5 cups of milk". Now add a tsp of dried oregano, basil, crushed pepper and chili flakes. Add 1/4 cup of parmesan and mozzarella cheese and stir until the cheese melts. When done add the prepared white sauce, spinach and pasta to vegetable mixture and mix to coat.
4. Heat the oven to 420 degrees F. Spoon the pasta mixture into a baking dish and top with mozzarella cheese.
Bake for 10-15 minutes until mozzarella cheese melts
